SIMPLE Crock Pot Chili ... It's good!
It's time for another sure-fire recipe from Betty Lou's green plastic recipe box. Now, mind you, I'm not much of a cook so when I find something that's easy to make and tastes good, you better believe I'm going to share my "find" with those in search of "easy" and "tastes good." I make this chili for my husband and myself so it feeds two generously. Just double or triple or fourful or - uh - well, you know what I mean. Without further ado -

Crockpot Chili for Two!
Brown 3/4 pounds of hamburger and drain. Throw it into a crock pot.
Then throw in these ingredients:
1 (15 ounce) can of mild chili beans (I use Bush's)
1 (16 ounce) jar of mild salsa (I use the no-name generic, cheap stuff) Go to Medium if you like your chili to bite you.
1/4 cup of water
1 tablespoon (or so) of brown sugar
Stir it all up...put on the lid and turn the crockpot on low for 6-8 hours or high for 4 hours or less. If you're in a hurry you can cook it on the stove - hot at first, then simmer for an hour.

Now, my dear darling husband likes to eat his chili with saltines or oyster crackers. Me? I like my chili topped with Fritos. "Ai-yi-yi-yi. I am the Frito Bandito." Oops. Betty Lou is dating herself. Pay me no never mind and go make yourself some Crockpot Chili for Two ... or more and enjoy!
