The Best Cheesecake You'll Ever Make!

This New York style cheesecake takes some work but is more than worth the effort. Make this cheesecake when you have a lot of friends over because it's so rich and satisfying that a small piece is all you need. And don't dump canned cherries or strawberries swimming in sugary glaze on it. Serve it plain, as is. It's art on a plate in its simplicity.



Crust:
1/2 cup soft butter
1/2 tsp. vanilla
1 1/2 egg yolks
1 1/4 cup flour
1/3 cup sugar
Mix all the ingredients and push the crust into a tall spring form cheesecake pan and up the sides as well. This is what takes some time as the crust is crumbly and you have to press hard against the sides to get the crust to stick.

Batter:
48 ounces of cream cheese (beat with mixture until soft)
Add 4 eggs and 2 egg yokes
Add 2 cups sugar
Add 1/2 cup flour and a dash of salt
Add 1 1/2 tsp. vanilla
Add 1/4 cup whipping cream
Pour into pan and bake at 400 degrees for 10 to 15 minutes.Turn down temperature to 300 degrees for 30 to 40 minutes. The cake is done when it cracks three times . (I was skeptical of this when first told that the cake must crack three times but it will happen, o yea of little faith.)
